SEVERNA PARK, Md. - Italian street fare has arrived in Severna Park with the opening of Capiche Street Food Italiano in Magothy Gateway Center (147 Ritchie Hwy, Ste. E., 21146).
The sister restaurant of Café Mezzanotte, just 4 miles south (at 760 Ritchie Hwy.), Capiche fills a niche for quick-service, fast-casual custom Italian dining in Severna Park.
Evoking the look of modern and urban Rome, the 2,400-square-foot space features cement floors, exposed ceilings, menu boards above the front counter line, and white brick walls with black and orange tile accents. There is seating for 60 at tufted orange booths or in simple black chairs alongside white and gray stone tabletops.
Executive chef is Zack Trabbold, executive chef of Café Mezzanotte and former executive chef at Adriatico Italian Restaurant in Rehoboth Beach, De. and Tutto Fresco in North Wilmington, De.
Offering “fun, fast and flavorful foods for the whole family,” Trabbold’s menu is intentionally simple. It includes four categories of food – all served at $8.50, regardless of protein and with no limit to the amount of toppings that you can add:
Pizzas (homemade dough quick fired in stone hearth ovens)
Pastas (spaghettini pasta with all fresh ingredients and house sauces)
Salads (featuring certified organic mixed greens)
Piadas (thin grilled Italian flatbread wraps filled with pasta or greens)
“Italian street food is an ultra-regional and farmer-driven local food movement. Capiche will stay true to this tradition,” said co-owner
Kosmas "Tommie" Koukoulis, who also is owner/operator of Café Mezzanotte and Uncle's Hawaiian Grindz in Fallston, Md.
Some of the locally-sourced ingredients are as follows:
- Antibiotic-free, air-chilled chicken from Bell & Evans in Fredericksburg, Pa.,
- Ethically-raised veal from Marcho Farms in Souderton, Pa.,
- Non-GMO stone ground corn meal from Castle Valley Mill in Bucks County, Pa.,
- Pasture raised, grain finished, dry aged beef fromRoseada Black Angus Farm in Monkton, Md.,
- Pasture-raised Berkshire pork from Wagon Wheel Ranch in Mt. Airy, Md., and
- Chemical-free fruits and vegetables from The Zahradka Farm in Middle River, Md.
“Our guests will enjoy farm fresh foods with refined flavor combinations in a fast, casual and fun Italian atmosphere!” said Capiche Co-Owner/General Manager
David Bremer, noting that pizzas will cook in under two minutes and the other dishes will be ready by the time the guest reaches the register.
To complement the meal, guests can pour their own Maine Root craft sodas– including blueberry, black cherry, lemon-lime and cola – at the beverage station which is a retrofitted beer tap system. Capiche does not serve alcohol, but allows BYOB.
